Directions:
1Combine chicken, 4 tablespoons lemon juice, 1 teaspoon olive oil and garlic in a zip lock bag. Toss to coat chicken and let stand for 5-10 minutes.
2Begin heating rice in water according to package instructions.
3Heat a pan over medium to high heat.
4Coat pan with cooking spray.
5Remove chicken from bag and discard left over marinade.
6Sprinkle chicken with salt and pepper then grill for approximately 6 minutes on each side.
